16 GB RAM is not a big amount. A maximum of 4 VMs should be possible, but in such a case each system did not have an own processor, if there is a heavy load on the VMs this did not work very well.

Depends on the games you play. For example Cyberpunk 2077 wouldn't work well with a CPU like that, 6 cores and 12 threads is the minimum (but 8 cores is best), and I expect more games like that to be coming out soon. Note that's just for running the game.
