Why does sonic call robotnik eggman?
Doctor Ivo "Eggman" Robotnik is the character's name from the original japanese Sonic the Hedgehog game series. When Sonic calls him Eggman it's also a reference to the egg-shape drones that Robotnik uses throughout the movie. Take that as an easter egg (pun intended).

Eggman doesn't necessarily WANT to kill Sonic as much as he wants to change the world in his image. If he just so happens to kill him then that's how it's gotta be. Keeping Sonic at bay has always been seen as part of the plan not the entirety of it.
