Just do the original with mods. SE just makes putting the mods on easier, but you lose a lot of mods because there is no SKSE. Plus the graphical differences are fixed with mods so there is really nothing different.

Can I play DLC without disc? The DLC will work, but you will need the physical disc in your console. Just because you bought the DLC, doesn't mean that you get the digital version of the original game for free.

Just the Violence which if your kid is not scarred by these things it's 100% fine for them! That's why I think anything under 12 would get scared by the violence but if your child is mature enough it's fine.
